I seriously LOVE making chili! I typically don't make it until the first cold and rainy day of the year, but I have already made it once this season because I am way too impatient! I wanted to share the recipe I use!
** Kristi’s Slow Cooker Chili **
Sauté the following:
2 medium onions, chopped
4 cloves of garlic, minced
2 green peppers, chopped
Brown:
2lbs of ground beef or shredded beef
In a small bowl, combine:
1tbs oregano
2tsp ground cumin
1tsp cayenne pepper
1tsp black pepper
1tsp salt
Combine the sautéed mixture, meat, seasonings in the crock pot and add:
1 (14oz) can pinto beans and 1 can kidney beans
1 large can of diced tomatoes with seasonings, drained
1-2 small cans of green chilies (or fresh roasted hatch chili’s!)
1 cup chicken broth
1 14oz can tomato sauce
Stir well and cook 6 to 8 hours on low, or 3 to 4 hours on high... top with sour cream, cheddar cheese and green onions
